Chicken Koobideh-Grilled Chicken Kabob
Ingredients:
- 1/2 kg ground chicken
- 2 green onions chopped
- 1 lage onion, grated
- 1 tsp liquid saffron
- 1/2 tsp salt
- 1/2 tsp sumac
- 1/3 tsp turmeric
- 3 tbsp of olive oil
- pinch of red chilli pepper
- black pepper to taste
Directions:
- In a large mixing bowl combine ground chicken and all the other ingredients together except the olive oil. Mix well using your hands.
- Leave a cool bowl of water next to you on the counter and wet your hands to make koobideh patties or you may use a kabab skewers to shape ground chicken into shish kabobs. I made patties because they are easy to serve as burgers and kid friendly!
- Once patties are made, you may use your preferred method of cooking. These can be baked, cooked in a pan on the stove with olive oil or barbecued. We decided to BBQ out patties and they came out delicious!!
