Turkish inspired eggs
Here is a fun Turkish inspired brunch idea! Eggs are a very good source of inexpensive, high quality protein. Egg yolks have been unfairly vilified for decades because they contain cholesterol and saturated fat. However, contrary to the popular belief, nutrients found in eggs such as cholesterol and Sat. fat are not linked to heart disease and poor health.
Ingredients
2 eggs
1 tbsp of fat of your choice ( I used ghee)
1 tomato diced
2 tbsp grated cheese of your choice
Salt and pepper to taste.
Directions:
- Heat ghee in a small-medium pan
- Add tomatoes and simmer for 6-8 minutes
- Crack eggs on top of the tomatoes and sprinkle cheese
- Cover and Simmer until eggs are ready
